Hi Luca, I think this is a great idea. Can you clarify the time zones
that appear in the doodle? or it automatically adapts to your current
time zone?
If mumble doesn't work. Using ISOC's Zoom could be a good idea. It
went very well with tens of participants from all continents when they
organized [1]

In relation with the technology, I would suggest to use Mumble... it is
super efficient if you have a low bandwidth connection... just voice.
